Traditional flavours, respect for nature, and the quest for genuine food are guiding lights of life at Valle Capore. We hope that our guests will embrace these values too.
The food we offer reflects our attention to the rhythm of nature. You’ll only find fresh, in season, products at the heart of our tasty meals. No peaches in January, no oranges in August! There is a balance in nature and we wish to respect it also when we sit at the table. We leave to others exotic dishes, the alchemy of complicated sauces or of unusual combinations of strange ingredients. Instead, we propose a wide choice of simple, but never boring, dishes. We bet on what our land has to give us. It is enough: no need to look for more.
About a thousand olive trees of different local varieties cover the gentle slopes that stretch to the river Farfa in our farm. From them comes the extra virgin olive oil that we serve to our guests. Our orchard produces a rich assortment of vegetables that we offer fresh or transformed in tasty preserves. The wonderful tomato sauce, for example, is a classic companion for many of our pastas. Our fruit trees contribute to the collection of marmalades and jams we present to our guests. We are particularly proud of the white peaches or cherry marmalade and of the more daring, but equally delicious, figs and toasted pecan nuts mash.
To this we add the spontaneous products that the woods and the glades of the farm offer to us. We pick wild vegetables, asparagus and chicory, mushrooms and truffles and then prepare them according to simple and genuine recipes presented with care and originality.
The meat comes from the farm’s breeding of swine and courtyard animals. We manure them with care and feed them only safe fodder of certain origin. Some of them eventually become our delicious hams, tasty sausages, rich stakes, succulent roasted duck…but that only happens after a very happy life!
We love our land. We were not born here; we chose to live at Valle Capore. We chose it because we fell in love with the river and the valley.
We hope that our visitors can feel our love for this place. It is the best way to transform our restaurant in a “ristoro” for friends.
